The Coutancie Beef  

The breeding technique of this ox and its mode of slaughter turn it into a meat of very high quality. Both from Limousine and blonde d’ Aquitaine cattle, the oxen graze quietly in the green meadows of Périgord. They are fed exclusively with grass, fodder and cereals. Some people compare it to the famous Kobé beef because of the organoleptic characteristics and the treatment which is dedicated to them when they reach maturity (massage and daily distribution of fermented corn beads having the same properties as the beer). Only the animals which encompass the optimal qualities are sold under the name of beef of Coutancie. This brand guarantees the following characteristics: delicacy of the texture, juicy aspect, subtly sprinkled with parsley and a bright red colour.
